West Table: Pioneering Cuisine

West Table: Pioneering Cuisine

Cameron and Rachel West traveled the country as they practiced culinary arts for about ten years.

They have more than 20 years combined restaurant experience.

“We learned lots of different things from different places we’ve been,” Cameron said, “but we really loved the community here in Lubbock,

and we really wanted to bring a restaurant to Lubbock that could satisfy the want for a little bit more upscale food in a cool location that people could enjoy.”

Their hunt for a building with “character and story” brought them to the former Pioneer Hotel in Downtown Lubbock.

They opened The West Table in that building in 2014.

“People love to come down here and tell us old stories of being here and being downtown,” Cameron said.

“The historic building really helped mold the kind of restaurant we became.”

Cameron and Rachel describe The West Table as a “family-run restaurant” with seasonal cuisine.

“We work with a lot of local farmers and a lot of local ranchers to provide Lubbock with the best food possible that they can get,” Cameron said.

“You shouldn't have to travel to bigger cities to get that.”

Together, they work to throw a dinner party every night as the “hosts.”

“That’s really our motto of the restaurant, is to entertain like it’s our house,” Cameron said.
